Ingredients
- 2 TBL olive oil
- 8 lg. chicken drumsticks & thighs (abt 2-3/4 LBS)
- S & P
- 1 red bell pepper, thinly sliced
- 1 spanish onion, thinly sliced
- 4 cloves garlic, thinly sliced
- 2 TBL tomato paste
- 1 28-oz can crushed tomatoes
- 2 bay leaves
- 1 tsp crushed red pepper
- 1/4 C chopped cilantro
- 1 LB spaghetti

Preparation
Step 1
in lg. skillet, heat olive oil over med heat
season chicken w/ S & P and add to skillet
cook until golden on both sides, abt. 10 min
transfer to plate
pour out all but 2 TBL of fat from skillet
add bell pepper, onion & garlic
cook until softened - abt 8 min
stir in tomato paste
add crushed tomatoes, bay leaves & crushed red pepper
add chicken & any juices
lower heat
cover & simmer until chicken is cooked through, abt. 25 min
discard bay leaves & stir in cilantro
season w/ S & P
meanwhile, in lg. pot of boiling salted water, cook spaghetti until al dente
drain
top w/ chicken & sauce
