- 8 oz whole-wheat or brown rice penne
- 16 oz frozen vegetables
- 15 oz chickpeas, drained and rinsed
- 1 onion, diced
- 2 Tbsp white whole-wheat flour
- 1 cup vegetable broth
- 1/4 tsp dried parsely

Step 1
1. Cook pasta to package directions, adding frozen vegetables during last few minutes. Drain and set aside.
2. Line a large skillet with a thin layer of water or broth. Sauté onion until soft, about 5-8 mins. Add the flour, stir to coat. Slowly whisk in the vegetable broth. Bring to a boil and cook until thickened, about 3-5 mins. Whisk in parsley and salt to taste.
3. Mix together the penne, vegetables, chickpeas, and sauce. Serve warm.
