Pastelon de Papa Boricua or Puerto Rican Sheperd's Pie

The Sheperd's Pie bar has been raised by this Puerto Rican version. Layers of mashed potatoes, Picadillo, and cheddar cheese are topped with Parmesan. Enjoy!

- 6 cups prepared mashed potatoes
- 1 egg, beaten
- 3 cups prepared Picadillo recipe
- 1 cup frozen mixed vegetables, thawed
- 2 cups shredded cheddar cheese
- 1/2 cup parmesan cheese, shredded

Preparation
Step 1
Preheat oven to 375 degrees fahrenheit.
To the mashed potatoes mix in beaten egg.
In a buttered 10x6 inch baking dish, spread half of potato mixture. Spread Picadillo over potato mixture and spread evenly to cover potato mixture. Sprinkle vegetables evenly over Picadillo. Sprinkle with half the cheddar cheese. Spread remaining half of potato mixture and spread evenly. Sprinkle with remaining cheddar cheese. Top with parmesan cheese evenly.
Bake in 375 degree fahrenheit oven for 20 minutes. Let rest 5 minutes before cutting in squares and serving.
