This was very good for both.
08/07/16 - UPDATE. I used romaine leaves - 7 medium-sized ones - which was perfect. Also, served Dan's with my homemade Teryaki sauce rather than the thai sauce.

Ingredients

  • required amount of Chard or Romaine leaves, rib shaved to make it easier to roll them
  • 1 clove garlic, peeled
  • 1/2-inch piece fresh ginger, peeled
  • 2 scallions, white and light green parts, roughly chopped
  • 2 tbsp. fresh cilantro leaves
  • 1 fresh small red Thai chili pepper, seeded, or dash of Siracha
  • 1/2 tablespoon fish sauce
  • 2 dried Kaffir lime leaves
  • 4 oz. ground chicken or turkey
  • 1 tablespoon juice and 1 teaspoon grated zest from 1 lime
  • 1/2 teaspoon sesame oil
  • 1/2 tablespoon toasted sesame seeds
  • Serve with Thai marinade/dipping sauce.

Preparation

Step 1

* Bring a large pot of salted water to boil. Plunge the chard or lettuce leaves into the boiling salted water to blanch for 1 minute or so, then remove to a bowl of ice water to stop the cooking. Drain on a towel and set aside. Pour out all but a couple inches of water in the bottom of the pot and place a bamboo steamer on top of the pot.

* Meanwhile, in a food processor, pulse the garlic, ginger, scallions, cilantro, red chili, fish sauce, and a pinch of salt until everything is minced. Add to the chicken with the lime zest and juice, and sesame oil and mix well to combine.

* Lay out the leaves of chard or lettuce on a cutting board and place a small amount (2 tablespoons) of the chicken mixture onto the root end of each. Roll up like a cigar, leaving the ends open, and place the parcels seam side down into the basket.

* Return the water to a boil in the pot, cover and steam until the chicken is cooked through - 20 minutes.

* Serve with the dipping sauce and the toasted sesame seeds scatted on top with rice on the side.
