Ingredients
- 1 cup vinegar
- 1/2-cup water
- 2 teaspoons salt
- 2 teaspoons sugar
- 5 sprigs thyme
- 5 slices ginger
- 3 plums

Step 1
In a sauce pan combine the vinegar, water, salt, sugar, thyme and vinegar. Bring to a boil and cook until sugar and salt is disolved.
While the liquid is boiling, halve,pit and slice the plums into 1/4-inch slices. Place the plums in a bowl.
Once the sugar and salt heve dissolved, removed the liquid from the heat and pour over plums. Let them sit and cool together.
Transfer to an airtight container and store in refrigerator.
