Ingredients

  • 1 can vegetable broth (14 oz.)
  • 1 cup chopped tomato
  • 1/2 cup chopped onion
  • 1 cup UNCLE BEN’S® Whole Grain Instant Brown Rice, uncooked
  • 1/4 cup water
  • 1 tsp. salt
  • 1 cup light cream
  • 1/4 tsp. ground nutmeg
  • 1 package frozen spinach thawed and squeezed dry
  • 3 eggs beaten
  • 1/2 tsp. ground white pepper
  • 1 cup shredded Swiss cheese

Preparation

Step 1

1. Cook rice according to package directions, replacing broth with water. Add water to meet the required amount of liquid in directions, if necessary.

2. In the meantime, combine spinach, 1/2 cup shredded Swiss cheese, 1/2 cup chopped tomato, onion, cream, eggs, salt, pepper and nutmeg, set aside.

3. Combine rice and the remaining 1/2 cup shredded Swiss cheese in large bowl; set aside.

4. Spray a 10-inch quiche dish with cooking spray or oil. Press rice mixture into bottom and sides of dish; using wax paper to press evenly. Bake in a preheated 400 degree F for 5 minutes. Lower the temperature to 375 degrees F and pour the spinach mixture into rice crust. Top with remaining 1/2 cup chopped tomato.

5. Continue baking at 375 degrees F for 25 minutes or until knife inserted near center comes out clean.
