Ingredients

  • Cookie Crust:
  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon cream of tarter
  • 1 teaspoon baking soda
  • 2 3/4 cups flour
  • Cream Cheese Filling:
  • 16 ounces cream cheese, softened
  • 1 cup sugar
  • 2 teaspoons vanilla
  • Glaze:
  • 3/8 cup water (or pineapple juice)
  • 1/2 cup orange juice
  • 1/8 cup lemon juice
  • 1 1/2 tablespoons cornstarch
  • 1/2 cup sugar
  • Dash of salt
  • Fruit Possibilities:
  • Grapes
  • Bananas
  • Pineapple
  • Strawberries
  • Kiwi
  • Mango

Preparation

Step 1

Make Cookie Crust:

Preheat oven to 350 F. Cream butter and sugar. Mix in eggs and vanilla. Add cream of tarter, baking soda, and flour and mix to combine. Spread out onto two 9 x 12 inch baking sheets or 15 inch pizza rounds. Bake for 12 minutes. Cool completely.


Make Cream Cheese Filling:

Beat together the cream cheese, sugar, and vanilla.

Make the Glaze:

Add the water, orange juice, lemon juice, cornstarch, sugar, and salt to a saucepan. Cook over medium-high heat until thick. Cool.

Assemble Pizza:

Spread cream cheese filling evenly over cooled crusts. Decoratively place the fruit onto each pizza. Drizzle glaze over the top. To save time, put all of the cut up fruit into a large bowl. Add the glaze and stir to coat. Spread evenly over each pizza.
