Chicken Enchilada Ring

Ingredients
- 2 cups shredded chicken
- 4 oz can chopped black olives
- 1 cup shredded Cheddar Jack cheese
- 4 oz can chopped green chilies
- 1/2 cup regular or light mayonnaise
- 1/2 cup regular or light sour cream
- 2 TB Southwest seasoning, such as Market Pantry Southwest Chipotle or taco seasoning
- 1 plum tomato, seeded & chopped
- Juice from 1/2 a lime
- 2 regular or light crescent rolls

Preparation
Step 1
Preheat oven to 375. In a large bowl, combine all ingredients except the crescent rolls. Separate crescent rolls into triangles. On a round baking stone or greased pizza pan, arrange triangles in a star-shaped circle, overlapping the wide ends at the center with the points outward. There should be about a 5-inch circle in the center. Using an ice cream scoop, drop chicken mixture filling on the widest end of each triangle. Keep adding until using all the filling. Bring the points of the triangles over the filling & tuck under the wide ends at the center. The filling will not be completely covered. Bake for 20 to 25 minutes or until golden brown.
