  • 9 lasagna noodles, uncooked
  • 1 tablespoon vegetable oil
  • 3 medium carrots, shredded
  • 1/2 cup chopped green onions
  • 2 pressed garlic cloves
  • 1 container (15 ounces) ricotta cheese
  • 2 cups (8 ounces) shredded mozzarella cheese, divided
  • 1 eff, lightly beaten
  • 3/4 teaspoon dried Italian seasoning
  • 1 jar (28 ounces) prepared spaghetti sauce

Step 1

Preheat oven to 350 degrees Fahrenheit. Cook pasta according to package directions; drain. Rinse under cold water. Heat oil in skillet over medium heat until hot. Saute' carrots, onion,and garlic in vegetable oil until vegetables are crisp-tender. For filling, combine ricotta cheese, 1 cup mozzarella cheese, egg, Italian seasoning, and sauteed vegetables. To assemble, pour 1 cup spaghetti sauce onto bottom of 9" Square oven safe pan. Place well-drained noodles on flat surface. With a medium sized scoop, place 3 scoops of the cheese filling on each noodle. Spread evenly with back of scoop. Roll up each noodle; place, seam side down, in the pan. Spoon remaining sauce evenly over noodles. Sprinkle with remaining mozzarella cheese; cover with foil. Bake 40-45 minutest. Remove foil and bake an additional 10 minutes or until cheese begins to turn golden brown.
