Ingredients
- 1 1/2 LBS eye of round roast or bottom round roast
- 2 LG onions, chopped
- 4 cloves garlic, minced
- 1/2 C steak sauce - A1 sauce
- 1 TBL worcestershire
- 1 TBL reg. mustard powder
- 1/2 tsp cayenne pepper
- 1 tsp freshly grd. pepper
- 1-2 tsp cajun seasoning
- 1-2 tsp beef soup base in 2 C water
- 1/2 lb fresh mushrooms

Preparation
Step 1
trim beef of all fat & gristle
cut into cubes, approx. 1 1/2"
heat dutch oven or stock pot over high heat
add beef
l;et brown, stirring occasionally, until meat has released its juices & they have evaporated, allowing meat to sizzle again
add onion & garlic & turn heat down to med.
stir until onion & garlic are softened
add steak sauce, worcestershire sauce, mustard powder, cayenne, pepper & cajun seasoning.
stir well, scraping bottom of pan
pour in beef broth & allow to come to boil
turn heat down so steak maintains slow boil
keep pot uncovered & cook for 1 hr
watch mix. & add water as necessary to keep beef covered w/ liquid
cut mushrooms in halves or quarters, so that they more or less match size of beef cubes
add to pot & cook at slow boil for another 30 min.
by this time beef should be very tender & liquid should have reduced to thick & spicy sauce
