Ingredients

  • 1 LB smoked sausage, cut into bite-size slices (andouille or polish)
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 clove garlic, minced (or 1/4 tsp minced garlic)
  • 2 C white rice
  • 4 C water
  • 1 TBL chicken soup base
  • 1 15-oz can chopped diced stewed tomatoes
  • 1-2 tsp cajun seasoning
  • 1 tsp thyme

Preparation

Step 1

add smoked sausage to lg. skillet or dutch oven over med. heat
after sausage has started browning, add onion, green pepper & garlic (if using fresh)
cook until vegies are soft & onion is transulucent
add remainig ingredients, including minced garlic if using.
bring to boil
reduce heat & simmer until all liquid is absorbed, 15-20 min
