Ingredients
- 1/4 C brown sugar
- 1/2 C butter, softened
- 1/2 C honey
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 C quick oats
- 1 C all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 C mini chocolate chips

Step 1
1. Preheat oven to 350. Lightly spray cookie sheets with non-stick cooking spray or line with a baking mat.
2. Cream together sugar, butter, and honey in the bowl of a mixer. Add in egg and vanilla extract and beat until creamy.
3. In a bowl, whisk together oats, flour, baking soda, and salt. Add dry ingredients to wet ingredients and stir to combine. Stir in chocolate chips.
4. Drop cookie dough by tablespoon full onto prepared cookie sheets. Bake for 8-10 minutes or until edges just start to turn golden brown. Centers will appear slightly under cooked. Allow to cool on cookie sheet for 3-4 minutes before removing to a wire rack to cool completely.
5. Store leftovers in an airtight container.
