Ingredients
- 1/4 C chopped garlic
- 1/2 C rice or white wine vinegar
- 1/4 C water
- 1/4 C olive oil
- 1/4 C grape seed or corn oil
- 2 TBL dried oregano
- 2 TBL dried rosemary
- 1 lemon, sliced
- 1 tsp red pepper flakes
- 1 tsp coarse ground black pepper
- 2 TBL salt
- 1 TBL sugar
- 2 Sm chickens, quartered

Preparation
Step 1
combine all ingredients in bowl & pour mixture over chicken
marinate overnight
cover w/ plastic wrap
next day, remove chicken from marinade (but don't wipe all herbs off skin)
season w/ S & P
you can cook chicken on grill or if using oven, place chicken on roasting rack on rimmed baking sheet & broil for 5 min on highest setting to crisp skin.
place chicken on middle rack & bake at 350 for 20 min
