Funfetti Gooey Cake Bars

- 1 box yellow cake mix
- 1/2 cup butter, softened
- 1 egg
- 2/3 cup sprinkles, divided into two 1/3 cups
- 1/2 cup sweetened condensed milk
- 1 cup white chocolate chips

They have such a vibrant color, and of course, taste. I love, love, LOVE the sprinkles in these bars! They make them even more irresistible to eat than they already are. Plus, they are ridiculously EASY to make! So if you’re a baking novice, or just want to make something fast and easy, this is the recipe for you!
1 box yellow cake mix
Preheat oven to 350 degrees F. Line a 9x9-inch baking pan with aluminum foil and spray with cooking spray. Set aside.
Using an electric mixer, beat the cake mix, butter, and egg together on medium speed until a thick dough forms. Add in 1/3 cup of the sprinkles and mix on low just until incorporated.
Press about 2/3 of the dough into the bottom of the prepared baking pan. Sprinkle the white chocolate chips and the remaining 1/3 cup of sprinkles on top. Pour the sweetened condensed milk evenly over the top. Separate the remaining dough into small balls and evenly space over the top.
Do I use just any box cake at all? also do I mix the cake mix as the box instructs and then add the egg and butter or just the dry cake, egg, and butter ?
I suggest using yellow cake mix as the recipes say, but if you would like to try a different flavor, go for it! I just can’t guarantee the outcome.
Also, don’t use the directions on the cake mix box, just use the cake mix itself and follow the directions in my recipe.
These were excellent! I made some color changes to make fall-themed cookies… used orange and black mixed chocolate chips and orange/black sprinkles instead of what the recipe calls for. Also I only had an 8×8 pan and I just cooked them an extra 10 minutes and they came out great! I covered the top with foil for the last 10 minutes so the cake part wouldn’t burn and the inside would cook through.
If I was to use a 9×13 pan… How would you adjust the recipe? And do you think a white cake mix would be ok? Thanks. ..
I personally wouldn’t suggest using white cake mix because the texture would be lighter and thinner and it can throw some things off. If you’re up for experimenting, go for it! But I can’t guarantee the outcome ?
If you aren’t a big fan of white chocolate is there anything else you could suggest? Im assuming milk chocolate would make them look ugly.
Can I us funfetti cake mix? I have several boxes on hand, and they already have sprinkles mixed in.
I haven’t made them with funfetti cake mix, so I can’t guarantee the outcome. However if that’s what you have, then they should turn out alright!
I used the funfetti cake mix and they turned out fabulous!!! I may have already eaten half the pan…maybe!
I’m sorry I do not. If there is a gluten-free cake mix that you would like to use instead of the yellow cake mix, go right ahead and try that!
30 minutes was way too long in the oven for mine. I used an 8 x 8 disposable aluminum pan. So I’m going to remake them in the same type of pan and check on it at 20 minutes and see how that works. Other than that, they are super delish and ultra sweet! Great recipe, thank you so much for sharing! !!

Ive made these before minus the white chocolate chips! Can’t wait to try adding them! ?
I just made these. I followed the recipe to a “T” and I thought they were really sweet. I have a huge sweet tooth but these were cloyingly sweet. Other than the sweetness, they do taste delicious and like cake batter. I will try to tweak the recipe next time to make them less sweet.
I am going to try these with the Pillsbury Funfetti GLUTEN FREE mix so my sister can eat them too! She has celiac bad so has to be gluten free! I am excited to try them!!
