Ingredients
- 2 1/2 tablespoons salt
- 2 tablespoons cumin
- 1/2 tablespoon ground mustard
- 3/4 teaspoon cayenne pepper
- 1 1/2 Tablespoons garlic powder
- 1 tablespoon ground thyme
- 1/2 tablespoon chili powder
- 1 1/2 tablespoon ground white pepper
- 1/2 tablespoon allspice
- 1/2 tablespoon paprika
- 1 3/4 teaspoon ground cloves
- 1 tablespoon ground oregano
- 6 beef tenderloins (8 oz.)
- 4 tablespoons olive oil

Preparation
Step 1
Mix all the spices together. Keep covered and store in refrigerator.This recipe should make 12 tablespoons of spice mix.
Season each steak with 1 tablespoon of the spice mix. Set aside in the refrigerator for up to an hour.
In a large skillet over medium high heat, add the olive oil. Sear the steaks for 2 minutes per side. Transfer the steaks to a wire rack (with a drip pan underneath). In a 325 degree oven. Bake for 12-15 minutes, depending on level of desired doneness. Remove from the heat and let rest for 5 minutes.
Serve with rice or risotto.
