  • 1/4 cup margarine or butter, melted
  • 1/2 cup low-fat milk
  • 3/4 cup low-sugar strawberry jam (like Smuckers)
  • 1 1/2 teaspoons lemon zest
  • 1 3/4 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 12 teaspoons low-sugar strawberry jam.

Makes 12 servings

1. Preheat the oven to 375°F. Lightly spray 12 muffin cups with non-stick baking spray (or line with paper or foil liners). In a medium bowl, whisk together first 5 ingredients (eggs through zest). Set aside.

2. In a large bowl, combine the flour, sugar, baking soda, and baking powder and stir. Make a well in the center and add the marmalade mixture. Using a large spoon, stir just until the dry ingredients are moistened.
