Ingredients

  • 3/4 lb chicken or steak (cut in thin strips)
  • 2 Tablespoons olive oil
  • 1 Tablespoon lime juice
  • 1 garlic clove, finely minced
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp red pepper flakes
  • 1/2 tsp Black pepper
  • 1/2 tsp salt
  • Onions
  • Green peppers
  • Tortillas

Preparation

Step 1

In bowl, mix together: 1 Tablespoon olive oil, Lime juice, Garlic, Chili powder, Cumin, red pepper flakes, Black pepper and salt.

Add beef or chicken to coat; set aside

Wrap tortillas in foil and place in 350 degree oven for 5-10 minute or until heated through

Cut onions in half lengthwise and slice into strips; cut peppers into strips.

In large non-stick skillet over med high heat, heat remaining oil.
Add onions and peppers stirring 3-4 minutes until softened; transfer to a bowl and set aside

Add beef or chicken to skillet and cook for 3-4 minutes (chicken needs to be cooked completely.

Return onions and pepper to skillet and stir for about 1 minute.

Salsa
Sour cream,
Shredded cheese
Chopped tomato
