Ingredients
- 1 tablespoon olive oil
- 6 slices thick bacon (thinly sliced in pieces, 1 1/4 cups)
- 3 cups roasted unsalted peanuts
- 3/4 cup pure maple syrup
- 3 large egg white (beaten until frothy)
- 1 teaspoon roughly chopped thyme leaves

Preparation
Step 1
Preheat your oven to 350° F.
Place a large sauté pan over medium high heat. When the pan is hot, add the olive oil followed by the bacon. Cook, stirring occasionally until the bacon is rendered and completely crisp, 5 minutes. Pour the rendered bacon into a strainer set over a bowl, reserving 2 teaspoons of the bacon fat. Blot the bacon on paper towels. Place in a food processor and pulverize until very fine.
In a mixing bowl combine the peanuts, maple syrup, beaten egg white, thyme, bacon and reserved bacon fat. Mix to thoroughly combine then pour into an even layer on a silicone mat covered sheet tray. Bake for 15 minutes then remove from the oven and mix, bringing the sides in and middle out. Return to the oven for another 15 minutes, baking until caramelized and the syrup has reduced.
Remove from the oven and season with salt. Let cool until hardened and crispy. Separate the clusters as the nut mix cools. Store in an air tight container.
