Ingredients
- 4 deboned chicken breasts
- 2 tblsp. olive oil
- salt
- pepper
- 4 tblsp. flour
- 1 tblsp. chopped garlic
- 2 tblsp. chopped shallots
- 1/4 c. orange liqueur
- 1/2 c. orange juice
- 1/4 c. chicken stock
- 3 oranges, peeled & sectioned
Preparation
Step 1
1. Heat oil in frying pan.
2. Dip chicken breasts in flour seasoned with salt & pepper.
3. Brown chicken in hot oil for 2 minutes on each side. Remove from pan & set aside.
4. Add shallots & garlic to pan & saute for 2 minutes.
5. Add liqueur. Reduce by half.
6. Add orange juice & stock. Boil for 5 minutes.
7. Put chicken back in pan & cook 8-10 minutes. Add orange sections.
