Ingredients
- 2 eggs
- 1 tsp. skim milk
- 2 small flour tortillas
- 1/2 tsp. butter
- 3 heaping Tbsp. fat-free refried beans
- Hot sauce
- Salt and freshly ground black pepper
- 2 Tbsp. salsa
- 1/4 cup shredded low-fat cheddar cheese (optional)

Preparation
Step 1
Beat together the eggs and milk.
Place the tortillas directly on the rack in a cold oven. Turn the oven to 300 degrees and heat the tortillas for approximately 5 minutes, or until warm and slightly crispy.
While the tortillas are warming, melt the butter in a small nonstick skillet over medium heat. Add the eggs and stir gently until they are set. Transfer the eggs to a serving plate and place another plate upside down over them to keep them warm.
In the same skillet, heat the beans until warmed through.
Place the tortillas on fresh plates. Spread beans over the tortillas, top with eggs, sprinkle with hot sauce and salt and pepper to taste, and finish with a spoonful of salsa and a scattering of cheese, if using.
