Ingredients

  • 1 cup raw rice (I used minute rice)
  • 2 packages frozen chopped broccoli
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 stick margarine or butter
  • 1 can cream of chicken soup or mushroom ( I liked mushroom best)
  • 1 small can mushrooms, pieces and stems, drained
  • 1 ( 8 ounce) jar original cheese whiz.

Preparation

Step 1

Cook rice and broccoli separatley, according to package directions. Drain broccoli and combine with rice.

In a skillet, saute the butter, onions, and celery until tender. Add the soup, mushrooms and cheese. Combine rice and cheese mixture.

Turn into a buttered baking dish and bake 30 minutes in a 350 degree F. oven.

This may be made a day ahead and baked before serving. It can also be frozen and baked later.

If you want to use fresh broccoli use two small bunches or one large bunch. Stems removed and broccoli chopped into smaller flowerets.
