Ingredients

  • One 16-ounce loaf French or Italian bread, cubed into 1-inch pieces
  • 8 slices maple bacon, cooked and crumbled, optional
  • 1/2 cup chopped pecans
  • 6 large eggs
  • 2 1/2 cups whole milk
  • 1/2 cup packed light brown sugar
  • 1 teaspoons pure vanilla extract
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground nutmeg
  • 1/3 cup maple syrup, plus more for serving

Preparation

Step 1

Grease a 13 x 9-inch baking dish with butter.

Arrange half the bread to the prepared baking dish then top with half the bacon and nuts. Top with remaining bread and then top with bacon and pecans on top.


Whisk together eggs, milk, sugar, vanilla, cinnamon, nutmeg and salt. Pour the batter over the top of the bread and press the bread down with your hands to make sure the bread absorbs the liquid.


Cover the casserole tightly with foil, and refrigerate for at least two hours, or overnight.


Remove casserole from refrigerator to remove the chill. Heat oven to 350 degrees F. Bake, covered with foil, for 40 minutes then remove the foil and continue baking for 20 minutes more, until puffed and golden. Pour syrup over the top of the casserole before serving.
