Prosciutto-Wrapped Asparagus

- 2 pounds medium asparagus (woody ends removed)
- 1/2 pound thinly sliced proscuitto
- 1/2 lemon (zest and juice)
- 2 teaspoons Dijon mustard
- extra-virgin olive oil
- salt and freshly ground black pepper

Preparation
Step 1
Preheat a grill to medium-high heat.
Wrap a slice of prosciutto around each asparagus spear. Drizzle with olive oil. Place on the grill and cook turning occasionally until slightly charred but still firm, about 5 minutes. Remove to a platter.
Meanwhile, whisk together the lemon juice, zest, Dijon mustard and about 1/4 cup of olive oil. Season with salt and pepper.
Serve the prosciutto wrapped asparagus alongside the lemon vinaigrette. Serve warm or at room temperature.
Tips
- Wrap the asparagus and make the vinaigrette ahead of time. Grill before serving your guests!
- If you can't find prosciutto, replace with thinly sliced deli ham, pancetta or bacon!
