Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1/4 teaspoon paprika
  • Dash of black pepper
  • 12 ounces boneless skinless chicken breast meat
  • 2 large whole wheat pita bread rounds, halved,
  • 7 ounces hummus
  • 3/4 cup chopped plum (Roma) tomatoes
  • 1/2 cup thinly sliced cucumber
  • 1/3 cup low fat plain yogurt

Preparation

Step 1

Preheat grill to medium heat. In a small bowl, combine olive oil, lemon juice, paprika and pepper. Brush both sides of chicken with olive oil mixture and grill for 10 to 15 minutes, turning once halfway during cooking time. Let chicken cook, then slice thinly. Carefully open pita halves and spread hummus inside; stuff with chicken, tomatoes, cucumber and top with yogurt.

SERVING SUGGESTION: A big salad of mixed baby greens, sliced red onion and crumbled Feta cheese tossed with Easy Balsamic Vinaigrette (see recipe).
