Shrimp with Lemon Orzo 0 Picture

Ingredients

  • Water/oil mixture
  • 1/2 cup chopped onion
  • 1 cup uncooked orzo
  • 1 cup low sodium chicken broth
  • 1/2 cup dry white wine OR additional chicken broth
  • 1/4 teaspoon dried thyme
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons lemon juice
  • 2 teaspoons olive oil
  • 1 1/2 pounds medium shrimp, peeled and deveined
  • 1/4 teaspoon black pepper

Preparation

Step 1

Coat a medium saucepan with water/oil mixture over medium-high heat; add onion and saute for 3 minutes; stir in orzo, broth, wine (or additional broth) and thyme; bring to a boil then reduce heat, cover and simmer for 15 minutes or until liquid is absorbed and orzo is cooked. Stir in chopped chives and lemon juice; keep warm. Heat the olive oil in a large skillet over medium-high heat. Sprinkle shrimp evenly with pepper; add to pan and cook for 3 minutes per side or until pink. Serve with orzo mixture.

SERVING SUGGESTION: Steamed baby carrots and steamed broccoli.
