Ingredients

  • 1 tablespoon oil
  • 1 pound ground beef, chicken, turkey, or venison, *see Note
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1 teaspoon chipotle powder
  • 1 teaspoon ancho chili powder
  • 1 teaspoon adobo powder
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • 1 teaspoon dried cilantro
  • 1 teaspoon salt
  • 1 pinch ground cinnamon
  • 1 each green pepper, diced
  • 1 can mushroom pieces, *see Note
  • 1 pound tomatoes, canned, crushed
  • 1 pound tomatoes, canned, diced
  • 1 can tomato sauce
  • 1 can light kidney beans (15oz), drained and rinsed
  • 1 can dark kidney beans (15oz), drained and rinsed
  • 1 can black beans (15oz), drained and rinsed
  • 2 cans V-8® vegetable juice, or more if needed (5.5 oz each cans)

Preparation

Step 1

1. Heat olive oil in dutch oven. Brown meat, onion, garlic in dutch oven. sprinkle in chipotle, ancho, adobo, cumin, chili powder, salt, and ciliantro. Let meat absorb the seasonings. Add cinnamon. Add green pepper and mushrooms. Cook until green pepper softens. Add tomatoes (crushed, diced, sauce).
2. Add drained beans and mix. Add V8 as needed to thin mixture out if desired.
3. Bring to low boil and then simmer loosely covered for about 1/2 hour to hour.

Notes: Use 14.5 ounce cans for tomatoes. Use two 4 or one 8 ounce can for mushrooms (or fresh sliced). Use any combination of beans you prefer. If using turkey use one package of ground usually 19 to 20 oz, 93 or 99% lean. Adjust chili powders to desired spiciness as desired. You ca use 1/2 each of red, yellow, and green pepper for color in place of the green pepper.
