Ingredients
- 1 ripe fresh pineapple
- 1 tsp. sherry
- 2 cups heavy cream
- 4 egg whites
- 1/2 cup sugar
- 1/2 cup crushed vanilla wafers
Preparation
Step 1
Peel and grate a ripe pineapple. Beat the egg whites until stiff. Gradually beat in the sugar and beat until glossy.
Whip the cream and fold it into the meringue. Fold in the sherry and as much of the pineapple and juice as the meringue will hold without becoming too soft.
Pile into glasses and chill.
