Ingredients
- 1 cup all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/8 tsp freshly ground pepper
- 1/8 tsp ground red (cayenne) pepper or crushed red pepper flakes
- 1 1/4 cups buttermilk or 1 1/2 cups plain yogurt
- 1 large egg
- 2 T mild olive or vegetable oil
- 4 oz shredded Gouda cheese (about 1 cup)
- Oil for cooking

Step 1
Put the flour, baking powder, baking soda, salt and peppers into a medium size bowl. Stir to mix well.
Measure the buttermilk or yogurt in a 2 cup glass measure. Add the egg and oil to the measuring cup. Beat with a fork or wire whisk to blend well. Pour into the flour mixture and stir just until well mixed. Stir in the cheese.
Heat the waffle iron, grease it lightly. Pour in the appropriate amount of batter and spread to the edges. Close and cook until the iron will open easily.
Keep warm in a 200 degree oven directly on the rack to stay crisp.
Delicious with Canadian bacon for breakfast.
