Mexican Pintos with Cactus 1 Picture

Ingredients

  • 1 1/2 cans pinto beans, rinsed and drained
  • 2 teaspoons salt, divided
  • 2 slices bacon, chopped
  • 1 large flat cactus leaves (nopales)
  • 1/2 jalapeno pepper, seeded and chopped
  • 1/3 cup onion, slices

Preparation

Step 1

Add the bacon, jalapeno and onion to a skillet and cook till bacon is almost cooked and onion is translucent. Set aside.

While bacon is cooking,remove any thorns from the cactus leaves, and slice into small pieces. Place in a saucepan with 1 1/2 teaspoons of salt, and fill with enough water to cover. Bring to a boil, and cook for 15 minutes. Drain and rinse with cold water for 1 minute. Add the beans, and cook for 10 more minutes on High. Reduce heat to medium and add bacon mixture. Cook for an additional 5 minutes.
