Ingredients

  • 6 egg whites
  • 1/2 teaspoon of cream of tartar
  • 3/4 cup of sugar
  • 1 3/4 cups of flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup of sugar
  • 1/2 cup of cooking
  • 6 yolks
  • 3/4 cup of orange juice
  • 2 tablespoon grated orange rind

Preparation

Step 1

1. Beat whites and cream of tartar on speed 12 to stiff but moist peaks.
2. Gradually add ¾ cup of sugar, beating until very stiff and shiny peaks are formed (3-4 minutes).
3. Sift together flour, baking powder, salt and ½ cup of sugar into small bowl.
4. Add oil, egg, yolks, orange juice and rind and beat for 1 minute.
5. Fold egg yolk mixture into meringue gently on speed 1 until blended (45 seconds).
6. Turn batter into ungreased tube pan.
7. Bake at 350 for 60 minutes or until cake springs back when lightly touched.
8. Invert and cool before shaking out.
9. Can be creamed with orange frosting.
