Ingredients

  • Filling:
  • 1 package of yellow cake mix
  • 1 tablespoon grated lemon peel
  • 1 package fluffy white frosting mix
  • 1/4 teaspoon ground nutmeg
  • 1 cup of sugar
  • 1/4 cup of cornstarch
  • 1/4 teaspoon salt
  • 1 cup of water
  • 1/3 cup of lemon juice
  • 2 tablespoons butter
  • 1 1/2 teaspoons of grated lemon peel
  • 4-6 drops yellow food color

Preparation

Step 1

1. Prepare cake mix and add lemon peel.
2. Bake as directed.
3. Prepare filling and reserve 1/3 cup.
4. Spread remaining filling over cake.
5. Prepare frosting and add nutmeg.
6. Frost cake.

Filling:

1. Mix sugar, cornstarch and salt. Stir in water gradually.
2. Cook over medium heat, stirring constantly until mixture thickens and boils.
3. Boil and stir one minute. Remove from heat.
4. Stir in remaining ingredients. Cool.
