  • 1/2 cup of flour
  • 1/8 teaspoon of salt
  • 1/4 teaspoon baking soda
  • 1/4 cup of butter
  • 1/2 cup of sugar
  • 1 teaspoon of lemon zest
  • 2 teaspoons lemon juice
  • 2 eggs yellow well beaten
  • 2 eggs white

Preparation

Step 1

1. Mix flour, salt and baking soda.
2. Beat butter and gradually add sugar beating well after each addition.
3. Incorporate lemon juice and zest and yellows.
4. Add dry ingredients and mix well.
5. Beat whites until firm and incorporate delicately to the mix.
6. Pour in muffin pan greased and bake at 350 for 20-25 minutes.
