Ingredients

  • Garnish:
  • 4 ounces of sugar
  • 3 yellow eggs
  • 1/3 cup of tia maria
  • 1 cup of flour tamisee
  • 3 whites
  • 1 pinch of salt
  • 1 tablespoon of sugar
  • 18 ounces whipping cream
  • 4 tablespoons of sugar
  • 2 ounces of Tia Maria

Preparation

Step 1

1. Butter and paper a heart shaped mold.
2. Beat the yellow, sugar and 1 tablespoon of Tia Maria till you obtain a white and thick cream sauce.
3. Add slowly the remaining Tia Maria and beat another 2 minutes.
4. Incorporate slowly the flour and salt.
5. Beat whites with a pinch of salt half of the way add sugar and beat till firm.
6. Slowly incorporate both mixture and pour in mold.
7. Bake 25-30 minutes and cool 5 minutes before unmolding.
8. Beat the whipping cream with sugar and slowly add remaining Tia Maria.
9. Beat till firm.
10. Cut cake in half, and fill with half of the garnish, then spread remaining cream.
