About This Recipe "Easy to make rice like you get at the mexican restaurant. Cooks up in your rice cooker without any fuss, mess or stirring! Haven't tried it- but could be made on the stovetop in a covered pot."

  • o 1 cup rice ( I used long grain rice)

  • o 2¼ cups low sodium chicken broth

  • o 0.5 (6 ounce) cans tomato paste

  • o 2 tablespoons butter

  • o ½ cup onions, diced small

  • o 1 garlic cloves, minced

  • o 0.5 (4 ounce) cans diced green chilies

  • o 1 dash pepper

  • o 1 dash red pepper flakes

  • o cilantro or parsley, for color


1. combine all ingredients in rice cooker. 2. cook according to manufacturer instructions. 3. when cooking time finished let it sit uncovered for 3 minutes or so to thicken. 4. stir before serving.
