Ingredients

  • 3/4 cup sugar
  • 1/4 cup brown sugar, firmly packed
  • 1/2 cup butter, softened
  • 1/2 teaspoon vanilla
  • 1 egg
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups oats, rolled (quick cooking)
  • 1/2 cup chocolate-covered raisins

Preparation

Step 1

1. Heat oven to 375.

2. Beat sugar-butter until light and fluffy. Add vanilla and egg, blend well.

3. Gradually add in flour-salt. Stir in oats and raisins. Drop by rounded teaspoonfuls 2" apart onto cookie sheets.

4. Bake 7-10 mins or until edges are light brown. Cool 1 min, transfer to racks.

Excellent.

Used chocolate-covered raisins and craisins. Substituted Splenda for 1/2 cup of the regular sugar.
