Ingredients

  • 2 t. fresh thyme leaves, chopped finely
  • 3 large onions chopped
  • 3 ribs celery, chopped
  • 8 oz. sliced portabella mushrooms
  • 1 lb. red potatoes, cubed
  • 1 lb. beef for stew
  • 1/4 t. salt
  • 1/8 t. pepper
  • 3 T. butter
  • 1/2 cup sherry or red wine
  • 2 cups carrots, chopped
  • 1/3 cup flour
  • 32 oz. beef broth
  • 1 t. worcestershire sauce

Step 1

Preheat large stockpot on medium for 2-3 min. Season beef with salt and pepper. Place butter in pan then add beef; cook and stir 2-3 min. Stir in onions; cook 10-12 min. or until soft. Stir in sherry or wine; cook 4-5 min or until most of liquid evaporates. Add celery, mushrooms, potatoes, and carrots. Stir in flour; bring to a boil. Reduce heat to simmer; cook 20 min. or until potatoes are tender.
