FISH*****Smoked Salmon & Cream Cheese Toasts

03/03/17 - UPDATE - I combined 2 tablespoons each of mascarpone (or cream cheese) and spreadable goat cheese with the zest of 1/2 a lemon, 1 tablespoon each minced fresh dill, finely minced onion or shallot and capers with salt and pepper and spread the toasts with that then topped with smoked salmon and avocado. Yummy and much easier to eat.

Ingredients
- 3 large slices PC À L’Européenne Multigrain Rye Bread or marble rye bread, halved
- 6 tablespoons spreadable goat cheese or light cream cheese
- lemon pepper, to taste
- thinly sliced shallots
- 1 pkg. Costco smoked salmon, torn into small pieces (2 oz.)
- finely chopped fresh dill
- 2 tablespoons capers, rinsed
- freshly ground pepper and Maldon salt to taste

Step 1
Toast the bread to desired level and spread evenly with the goat cheese and sprinkle with the lemon pepper.
Layer the sliced shallots and the salmon evenly over the toasts, topping with the capers, dill, salt and pepper, and serve. Add some avocado slices or cucumber, carrot or zucchini spears on the side. 2 ounces of avocado each adds 95 calories and 3.8 grams of fibre (I used a less ripe one, which could be picked up and eaten).
