Ingredients

  • 3 cups cooked chicken meat
  • 4 cans Bush's Northern White Beans
  • 2 cans Swanson's chicken broth
  • 1 tsp. Better Than Bullion Base dissolved in 1 cup water
  • 1 4-oz. Can chopped green chiles (do not drain)
  • 2 cloves chopped garlic
  • ¾ tsp kosher salt
  • 1 large red or yellow onion, diced
  • 2 tsp ground cumin
  • 2 tsp dried oregano (sometimes I use less)
  • 1 tsp dried cilantro
  • pinch of ground cloves
  • pinch of cayenne pepper
  • Tabasco sauce ...according to taste
  • Green pepper sauce..according to taste
  • Garnish: shredded cheese, monterrey jack and cheddar mix
  • diced tomatoes or mexican salsa
  • diced red or green onions
  • sour cream

Preparation

Step 1

Sautee onion and garlic til glassy looking and cooked through. Add can of chiles and
other dried seasonings. (salt, cumin, etc)

Add beans (drained, but not rinsed) to onion mixture. Add Better than Bullion base and
water, and chicken broth...... and bring to simmer. Add cooked chicken, add some
pepper sauce...according to taste.
