Ingredients

  • 2 colossal onions
  • Oil, for deep frying
  • 2 cups all-purpose flour
  • 1 = tablespoons salt, plus more to taste
  • 1 teaspoon white ground pepper
  • 1 = tablespoons cornstarch
  • 1 1/4 cups buttermilk

Step 1

Trim the onions and cut them in half crosswise into 1-inch slices. Separate the segments into onion rings, making sure the onion rings are no smaller than 2 inches in diameter; you should end up with about 20 rings. Place in a bowl of ice water at least 10 minutes. This will loosen the membrane on the inside of each onion ring; remove it.
Preheat 4 inches of oil in a large pot or deep fryer to 375 degrees. When ready to cook, combine the flour, salt, pepper and cornstarch. Divide the flour mixture between two plates. Place the buttermilk in a shallow bowl.
Dredge the onion rings in one plate of seasoned flour. Submerge in buttermilk and then dredge in the second plate of flour mixture. Place the coated onion ring in the heated oil. Repeat until pan is full. Cook a few seconds until golden brown. Drain on paper towels and keep warm in a 200-degree oven. Repeat until all onion rings are coated and fried. Season with salt to taste. Makes 20 rings.
