Ingredients

  • 6 cups sliced peeled stone fruit, 6-8 cups
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon, or 1/2 tsp nutmeg or cardamom
  • 1/4 cup flour
  • 1 lemon, zest of
  • 1 tablespoon lemon juice
  • 1 1/2 cups flour, or whole-wheat pastry flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter, in small pieces
  • 1/2 cup buttermilk
  • 1/2 teaspoon vanilla
  • 1 egg, or 1 tbsp cream or milk

Preparation

Step 1

1. Heat oven to 375.

2. Toss together fruit-lemon juice. Pour into a sprayed 8x10" baking dish.

3. Combine flour-salt. Cut in butter.

4. Stir in buttermilk and vanilla until dough clings together when grabbed with your hand. Spoon over fruit. Brush with egg and sprinkle with sugar.

5. Bake until cooked and bubbly, about 25 minutes. Let sit a bit before serving.

Used nectarines - Really very good - only complaint was a bit too lemony, could easily cut back next time. Cut the sugar by 1/3 and it was still plenty sweet.

Used 4 tbsp butter instead of 6, needed more buttermilk, used half regular flour and half WWP.
