Ingredients

  • 1 c. dried Italian seasoned bread crumbs
  • 3 tbsp. grated Parmesan cheese
  • 6 whole large chicken breasts, skinned, boneless
  • 1/2 c. sliced green onion
  • 2 tsp. margarine
  • 2 tsp. flour
  • 1 c. milk
  • 2 (10 oz.) packs frozen spinach, chopped and drained
  • 1/2 c. cooked ham (optional)

Preparation

Step 1

Combine bread crumbs and cheese; reserve half for topping. Rinse chicken; dry. Dip chicken in crumb mixture to coat lightly. Place in a 13x9" baking dish.
In a small saucepan, cook onion in margarine until tender. Stir in flour until blended. Add milk. Cook and stir over medium heat until thickened and bubbly. Stir in spinach and ham.
Spoon spinach mixture over chicken; sprinkle with the remaining crumb mixture. Bake, uncovered, in a 350 degree oven for 40-45 minutes until chicken is no longer pink.
