Ingredients
- 1 1/2 cups sugar
- 2/3 cup plus 1 1/2 tea. water
- 2/3 cup light corn syrup
- 2 Tbsp. butter, plus additional for greasing pan and spoon
- 1/2 cup raw Spanish peanuts (for nuttier brittle use 1 cup)
- 1/2 tea. salt
- 1/2 tea. vanilla
- 1/2 tea. baking soda

Generously butter a 12x18 baking sheet. Make sure all ingredients are measured out and ready before you begin the next step. this recipe come together quickly.
Mix sugar, 2/3 cup water, and corn syrup in a deep, heavy saucepan. Bring to a boil over high heat, stirring; boil 3 minutes. Continue to boil until mixture registers 250 degrees. Stir in 2 Tbsp. butter.
Continue cooking until mixture turns a light brown color and registers 300 degrees., about 2 minutes. Remove from heat,m and stir in peanuts. Quickly mix together salt, vanilla, baking soda, and remaining 1 1/2 tea. water in a small bowl; stir into hot nut mixture, mixing well.
Pour hot mixture onto prepared baking sheet. Use back of a buttered spoon to spread thinly and evenly. Let cool at least 10 minutes, then break into pieces.
