Ingredients
- 1 head bibb lettuce
- 1/2 head red leaf lettuce
- 1/4 cup crumbled blue cheese
- 12 rings red onions
- 2 tbs pine nuts (pignoli), toasted
- Rasberry Maple Dressing
- 1/2 cup raspberry vinegar
- 1/2 cup olive oil
- 1/2 cup vegetable oil
- 1/2 cup real maple syrup
- 2 tbs dijon mustard
- 2 tbs dried tarragon
- salt and pepper to taste

Preparation
Step 1
Tear lettuce leaves by hand into bite size pieces and toss with 3/4 cup dressing in a large bowl. Divide lettuce evenly among 6 chilled plates and top each with blue cheese, onion rings and pine nuts
Dressing: In a large bowl whisk all ingredients together vigorously. It should form a loose emulsion. Refrigerate until ready to use. Whisk again before using - makes about 2 cups.
