Ingredients
- 2 cups of dry white wine
- 2 garlic cloves cut up
- 3/4 pound of imported swiss cheese grated (3 cups) mixed with 1 tablespoon of cornstarch
- 2 tablespoons of butter
- 2-6 tablespoons heavy cream
- salt
- fresh ground black pepper
- 3 tablespoons kirsch
- 1 loaf of French bread cut in 1-inch cube

Preparation
Step 1
1. Boil the wine and garlic briskly until reduced to 1 1/12 cups. Strain the wine in a fondue chafing dish.
2. Over direct heat return the wine to a boil and add the grated cheese and stir the cream.
3. Season with salt and pepper and add kirsch if desired.
