Ingredients
- 3 large yukon gold potatoes, sliced into rounds
- 2 celery stalks, diced
- 1 onion, diced
- 1 large bell pepper, diced
- 3 chicken breasts fully cooked, cut into chunks
- salt and pepper to taste
- 1 can cream of celery soup
- 1 can chicken gravy
- 1/4 cup water
- 14.5 oz can diced tomatoes
- 1 tbsp butter
- 1 can (2.8oz) french fried onions

Preparation
Step 1
1. Preheat oven to 400F. In a lightly sprayed deep casserole dish add half of the potatoes. On top of that add celery, onions, pepper and chicken. Top with remaining potatoes and salt and pepper top.
2. In a small bowl, combine soup, gravy and water and pour over top of casserole. Cover with foil and cook for 1 hour.
3. In a small bowl melt butter and add french fried onions mixing well and smashing onions as you stir. Spread on top of casserole and bake uncovered for an additional 5 mins.
