Ingredients

  • 12 oz. jar Apricot Preserves
  • 3/4 cup Butter, softened
  • 1 cup Sugar
  • 1 Egg
  • 1/4 tsp. Baking Powder
  • 2 cups Flour
  • 1/2 tsp. Vanilla
  • 1/2 cup chopped Walnuts
  • 1 1/3 cups Coconut

Preparation

Step 1

Preheat oven to 350F.
Prepare a 9x12 baking pan by lining with release Foil.
Cream butter and sugar together, and add the egg and vanilla. Mix together the remaining dry ingredients and mix thoroughly. Take 2/3 of the dough and press into the bottom of the prepared dish. Spread on the preserves. Crumble the remaining 1/3 of the dough on top of the preserves and press down lightly. Bake for 30 minutes until golden. Cool before cutting.
