Ingredients
- 1 Head of broccoli cut into florets
- 1/2 cup red onion chopped
- 6 slices bacon cooked and crumbled
- Dressing
- 1 egg + 1 egg yolk
- 1/2 cup sugar
- 1/2 tsp dry mustard
- 1 1/2 tsp cornstarch
- 1/4 cup cider vinegar
- 1/4 cup water
- 1/4 tsp salt
- 2 tbs softened butter
- 1/2 cup mayonnaise

Preparation
Step 1
Lightly steam broccoli florets - about 3 minutes then put into ice water to stop cooking. Drain and put into bowl.
Dressing
Whisk egg, egg yolk, sugar, mustard and cornstarch in a small bowl and set aside. In saucepan, combine vinegar, water and salt, bring to boil remove from heat and add egg mixture while whisking. Return to heat and cook and stir for one minute. Remove from heat, stir in butter and mayonnaise and put in refrigerator until ready to use.
Combing all salad ingredients and add dressing just before serving
