Ham and Two-Cheese Quesadillas

Ingredients
- 6 0z. reduced fat cream cheese, at room temperature
- 3/4 cup shredded mozzarella cheese
- 1/3 cup chopped scallions
- 1 heaping tbsp. pepper jelly (optional)
- four 9 inch whole wheat tortillas
- 8 thinly sliced pieces ham, such as Black Forest
- non-stick cooking spray

Preparation
Step 1
In a medium bowl, combine the cream cheese, mozzarella cheese, scallions and pepper jelly if using.
Place the two tortillas on a work surface. Divide half of the cream cheese mixture over the two tortillas and spread into a thin layer. Transfer the tortillas onto a baking sheet.
Place the remaining tortillas on the work surface. Spread the remaining cream cheese mixture over the tortillas. Arrange 4 slices of ham on top of each tortilla, then top with the reserved tortillas, cream cheese down. Gently press so the sides stick together.
Heat a large non-stick pan over medium heat. When hot, coat with non-stick cooking spray and cook the quesadillas one at a time, 3-5 minutes each side. (the ham may release hot liquid so be careful when flipping them)
Cut each quesadilla into 6-8 pieces and serve hot.
