Ingredients

  • 3 cup Rolled Oats (or oat flour)
  • 2-3 cups Almond Milk (or water, or other milk alternative)
  • 2 bananas
  • Oil to coat pan
  • optional: 1 cup ground flaxseed (I always add) cinnamon, nutmeg

Preparation

Step 1

Heat a pan on medium heat. Add coconut oil or other vegetable cooking oil to the pan.

Add oats (ground flax and cinnamon) and pulse until fine. Once oats are pulsed, add in the chunks of bananas, pulse. Then slowly add milk until smooth batter forms.

Using 1/4 cup measuring cup add pancake batter to prepared pan and cook 2-3 minutes before flipping. Cook additional 2 minutes on other side.

Serve with fresh fruit or other toppings such as coconut, dried fruit, nuts, nut butter etc.
