Ingredients

  • Vegetable cooking spray
  • 1 1/4 cups unbleached all-purpose flour
  • 1/4 cup yellow cornmeal
  • 2 teaspoons baking powder
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon unsalted butter
  • 4 medium scallions, finely chopped
  • 1 cup low-fat buttermilk

Preparation

Step 1

Preheat oven to 375°.
Lightly spray a large baking sheet with the cooking spray. In a large bowl, toss flour, cornmeal, baking powder, sugar and salt. Using your fingertips, work in butter until blended. Toss in the scallions, stir in the buttermilk just until the mixture comes together.
Spoon the dough onto the prepared baking sheet in 5 equal mounds, spacing about 2 inches apart. Bake about 25 minutes or until golden brown.
Transfer to a rack and let cool slightly. Serve warm.
